Many customers ask why we cover our gelato with lids. Our system is designed to keep each flavor in its own individual, temperature-controlled section made of stainless steel. Our custom-built display case keeps our gelato at the perfect consistency.

It also prevents one flavor from taking on the aroma or taste of another, as well as thermal shock, which occurs when temperature fluctuates and causes icy crystallization.

When you taste our gelato and sorbet, you’ll understand why we go to such extremes to keep them just so.
